Well, I’m actually not a big fan of ice cream. I mostly lost my appetite for ice cream while working in ice cream shops as a youth. I started to loathe the delicious dessert because of scraping and wiping ice cream off too many surfaces, freezing my butt off when grabbing a new tub out of the walk in freezer (the flavour you want is always at the back, piled under a bunch of other heavy tubs), and then having to muscle out the very hard frozen ice cream from that newly removed tub.
However…I recognize that, for many, ice cream is one of the best parts of summer and a best friend during times of needed consolation and comfort. I see that in the long lineups outside of ice cream stores nearby.
If you, like me, don’t want to wait in line, want to save some money, and want dairy-free options readily handy at home, read on for some recipe options!
Dairy-free pina colada ice cream
No need to miss out if you are lactose intolerant and cannot get to the tropics now. A dairy-free pina colada “ice cream” to the rescue.
- 1 can full-fat coconut milk– note that I think it would be better with coconut cream (400 ml )
- 2 cups frozen pineapple (to be honest, I did not measure; I just added a bunch 🙂 that is approximately this amount)
- 1/4 cup sweetener (I used organic cane sugar, but you could use other sweetener)
- 1/8 tsp salt
- 1 1/2 tsp vanilla extract
- Add all ingredients to a high speed blender, like a Vitamix. Blend until smooth.
- If it is not frozen enough, you can freeze it longer, but it will get very firm and need to be defrosted a bit if it is frozen for awhile.
