Rice Cooker or Instant Pot Ready-in-the-Morning Oatmeal Recipe

Equipment

  • 1 rice cooker ideally, an automatic one; you can also use an Instant Pot

Ingredients
  

  • 1/3 cup steel cut oats
  • 1 cup water
  • Small handful of goji berries
  • Small handful of raisins
  • Small handful of pumpkin seeds or almonds
  • Small handful of unsweetened coconut flakes

Instructions
 

  • Place steel cut oats and water in the inner cooking pan.
  • Place the inner cooking pan in the main body of the rice cooker or Instant Pot, plug in the unit, and cook using the "Porridge" setting. If you want to do it overnight, set the timing so that it will be ready the next morning.
  • In the morning, when the rice cooker or Instant Pot turns to Keep Warm, open the lid, stir and add the remaining ingredients.
  • Serve warm.

Notes

I do this every night and time it to be ready in the morning.
Using the Timer function and soaking the oats overnight will help soften the texture. 
I add almond milk or rice, oat, coconut, or other milk in the morning. You could choose to add a tsp of honey or maple syrup. I like adding fresh berries and chia seeds too.
