I just got a Vitamix. Thank you Airmiles! 🙂 As a result, in just one day I made a variation on this recipe, guacamole, salsa, and black bean burgers. And, of course, a kale-based smoothie. The good news is that I’ve made this recipe once before, in my pre-Vitamix life, and it worked just fine. I used my Nutribullet, but a food processor would have been a better choice, as I almost broke it.

Kale and Hemp Spread Recipe
I feel like you can get healthier just by reading the title of this recipe. 🙂 It’s good to top on veggies or crackers, or as an add to a wrap or sandwich.
Ingredients
- 2 cups lightly packed kale leaves, washed and dried (I make sure to remove the stalks, as those are bitter, and I prefer dinosaur kale as it’s less bitter than curly kale)
- 1/3 cup hemp hearts
- 1/3 cup sun-dried tomatoes packed in oil
- 2 Tbsp freshly squeezed lemon juice
- 1/2 tsp sea salt (or Himalayan salt)
- 1/8 tsp cayenne pepper (I don’t like hot spicy, so I prefer paprika or skip it altogether)
Instructions
- Combine everything in a food processor or powerful blender.
- Alternate pulsing the mixing and scraping the sides so that everything gets chopped and mixed.
- You may need to add a bit of water to help smooth the spread, but make sure to only add a bit at a time.
