Do you remember the ch-ch-ch chia pet commercials? Who would have ever thought that something more useful could come out of those little seeds? 😉 Well, chia seeds are rich in omega 3 essential fatty acids (EFAs), fibre, and protein. And, they are like magic for making a nutritious and delicious pudding. This chia seed pudding recipe my go-to recipe for when I need to bring a dessert and I don’t have much time. It also makes for a great snack or dessert at home!
Easy Overnight Chia Seed Pudding Recipe
Ingredients
- lidded jars to make and store this in
- 1/2 cup oat milk, soy milk, almond milk, cow’s milk, or your choice of milk
- 1 tsp honey, maple syrup, or your choice and amount of sweetener
- 2 Tbsp of chia seeds
- fruit or other toppings of your choice
Directions
- Mix your milk, sweetener, and chia seeds in the jar.
- Mix well. You might need to let it settle for a couple of minutes and then mix again to make sure it’s fully blended with no clumps.
- Lid it and store it in the fridge for at least 2 hours or overnight.
- When you’re ready to eat it, you can add fruit or other toppings, if you like.
Extra Tips
My favourite flavour for anything is chocolate, so I’ve mixed in cacao powder and cacao nibs. Yum! But keep in mind that this will contain some caffeine, so if you’re sensitive to that, make sure it’s only for an early day snack, not too late in the day.
Coconut flakes are a good flavour and texture add.
Sprinkle in some nuts for some extra protein, essential fats, flavour, and crunch.
A bit of vanilla extract (tiny bit) can also be tasty.
